Bridal Brunch

It’s crazy to think that the wedding is less than 40 days away. I had my second fitting today and my dress is looking better. I’ve lost 3.5 pounds since before the holidays, so I’m on the right track. I’m also feeling a lot more “zen” about the whole wedding in general since the last time I wrote, so let’s hope that lasts for awhile.

Since the countdown is getting shorter, that means that it’s almost time for my bridal shower! My lovely bridesmaids are working on getting the shower together and I’ve offered to help them out with things here and there. The plan is to start the shin-dig around 11 and have a brunch-type affair for around 40 of my closest ladies (family and friends), which is where you come in!

I’m meeting up with some of the girls Wednesday night for some dinner, girl talk, and to work on the DIY pomanders, but while we’re all together we’re going to talk about specifics for the shower, mainly: the food.

So I’m opening this post up to you:

What’s your go-to dish for a get-together?

  2. Snickers and apple salad. Sounds weird, but I get a handful of recipe requests everytime I make it.

    4 to 5 granny smith apples cut up into bite size pieces
    6 to 8 snickers cut up into bite size pieces
    8 oz sour cream (put the apples in this immediately to stop them from browning)
    tub of cool whip
    mix everything together & serve

  3. Cream cheese and green chile pinwheels!

    In a large bowl blend 8 oz. cream cheese, 4 oz. chopped green chiles (1-2 roasted, peeled and chopped chiles), 2 tablespoons milk, a couple sprinkles of garlic salt (to taste). I use electric beaters to mix everything together.
    Spread mixture onto good quality flour tortillas (I usually use 15-20 tortillas). Roll tortillas tightly and cut into 1-2 inch pieces.

  4. Hot Spinach and Artichoke Dip

    Combine:
    1 10 oz box frozen chopped spinach
    1 14 oz can artichoke hearts (drained and roughly chopped)
    1 cup shredded parmesan-romano cheese
    1/2 cup shredded mozzarella
    10 oz jar of alfredo sauce
    1 teaspoon minced garlic
    4 ounces soften cream cheese and pepper to taste.

    Spread into a greased 8" x 8" dish and bake at 350 for 25-30 minutes.

    I usually eat it with tortilla chips, but it's great with bread, pitas or veggies.

  5. YES! I second the cream cheese and green chili pinwheels. They are delicious.

    Also I love grilled stuffed jalapenos. Jalapenos cleaned out, stuffed with cream cheese, wrapped in bacon and grilled.

    Also, shrimp covered in red chili sauce wrapped in bacon and grilled on skewers.

  6. Oooo showers are the best! I was going to ask if you look at your registries to see what is purchased, then I saw your tweet. I totally LOVED doing that!

    As far as what I always bring, well, I always dump a jar of spinach dip from the store in a nice bowl and take that. Classy, I know.
