Cinco de Mayo Favorites!

It’s absolutely no secret that I love Mexican food. Seriously, just thinking about it makes me crave it and then I start to drool. I wish I was kidding about the drool. There’s just something about the mouthwatering ingredients that makes my taste buds do a little dance. When that cheese, chile, meat, and seasonings get together it’s like an immediate fiesta kicks off in my mouth.

Speaking of fiesta…are you celebrating Cinco de Mayo this Sunday? Since it’s just two days away, I wanted to share my favorite recipes with you with plenty of time to gather the ingredients to make these for the big da. These are foods we eat pretty often over here and they’re all based on New Mexico cuisine. I realize finding fresh chile isn’t usually possible, but if you can find it you’re in for a treat. Canned green chile isn’t horrible (I actually just used some canned Hatch chile
on my breakfast sandwich this morning), but it does lack that fresh, intense, roasted flavor. Interested in trying out some chile not from a can? Look for Bueno chile in your frozen food aisle (in selected states).

Besides making guacamole with the two avocados ripening in a brown paper bag in my kitchen and enjoying a margarita, I have no idea what else we’re making for Cinco de Mayo, but I’m sure it’ll include at least one of the following dishes!
