This Week’s Eats {a meal plan}
I love reading menu posts, because I almost always find a new recipe to make. We always try to switch things up and try new things with meals, which is why I think I enjoy cooking so much. I have no idea if this will be a weekly series, but I figured it’d be fun to show you what we’re whipping up in the kitchen!
We usually shop for the week on Saturday or Sunday and are pretty good about sticking to our list. Sometimes we’ll swap meals with days, but for the most part we don’t stray from what we have planned. Of course, we’re flexible if something isn’t jiving that day or if other plans come up, but for the most part, what you see is what you get. We’ve noticed this helps keep our food waste down and minimizes the amount of times we eat out.
Also, I haven’t posted about this yet (I’ll share all the fun stuff we’ve changed in our house after the holidays) but we took an empty wall in the kitchen, threw some chalkboard paint on it, and now we have a built-in message center. We’re LOVING it so far.
- Mahi Mahi covered with a Simple Sauteed Tomato Sauce with grilled zucchini and asparagus
- Roasted Cauliflower, Garlic, Mushroom and Bacon soup (I used a combo of these three recipes {one, two, three})
- Ahi tuna and green beans (covered in crushed black peppercorns and lightly seared. Served with these green beans)
- Braised Pot Roast (new recipe)
- Crockpot Spicy Dr. Pepper Pulled Pork with Baked Sweet Potatoes (new recipe—uses soda, so not paleo)
- Green Chile Stew (using turnips instead of potatoes to make it paleo)

I would love a chalkboard wall like that! I also meal plan for the week and love how easy it makes cooking dinner. This is my plan for the week:
Monday – Korean Beef with Rice
Tuesday – Baked Potato Soup
Wednesday – Smothered Pork Burritos
Thursday – Meatloaf and Potatoes
Friday – Shredded Pork and Sauerkraut Sandwiches with French Fries
Saturday – Pizza
Sunday – Lasagna Rolls
Can you please share your soup recipe? I'm trying to find ways to get my boyfriend to eat more vegetables. I've heard cauliflower is a good bland base.
I need to get back to meal planning some day… but it hurts my head 😉 I won't be cooking much this week, because hubby is gone for training. So it will be easy things for me and the kids!
