This Week’s Eats {1.26—2.1}

Last week went by a little too fast for my liking. In fact, I’m not okay with this being the last week of January. We ate some good food, though, and I even landed a fun opportunity based on this post. Hooray for good things!

I know I’ve been saying this for awhile, but I’m really going to try getting back into sharing some of the recipes we make (like the cauliflower rice and this amazing Brussels sprouts side dish, for example). I just need to get my act together and write them out. This week we’re planning on eating some comfort foods and I’m really looking forward to dinners already.

Here’s our menu plan for this week: 

Sunday: Roasted chicken with collard greens and baked sweet potatoes

Monday: Teriyaki Chicken and cauliflower rice (we made this chicken a couple weeks ago and it was SO good that we’re making it again. Also, I’m going to try taking pictures of our cauliflower rice, since I make it a wee bit different than the link I’ve been posting to.)

Tuesday: Crock pot Burgundy Beef Stew with brown butter mashed rutabaga (new recipe for the roast, and rutabaga’s are my favorite potato substitute, so I’m going to try making mashed “potatoes.” Also, this is a somewhat paleo cheat meal—wine and butter aren’t paleo, but necessary for these dishes.) Oh, I’ll probably make some paleo rolls, because they rock!

Wednesday: Green Chile Sausage Cauliflower Casserole (new recipe from the same site that had the spaghetti pie from last week, which was really good, by the way)

Thursday: Steak, baked sweet potatoes, and veggies (anyone interested in our steak marinade? Should I add that to my list of recipes to blog?)

Friday: Shrimp stir fry with fried cauliflower rice

Saturday: Lamb chops (no recipe yet…need to find one)

  1. Hi! Love this idea..I'm always so curious what people do for dinner on a weekly basis. I've been doing a weekly Sunday round-up of meals I made that week. I linked to that…I hope that is ok. We like to try new dishes so I like to give my edits or notes for each one. Very cool idea and I hope to find some more meal inspiration!
