This Week’s Eats {St. Patrick’s Day}

This week flew by. I was really close to saying “this week literally flew by,” but someone out there would call me out on the fact that weeks literally can’t fly. I’d argue that and take them back to this week. I think it helped that we finally got back on track with our diet. After a few weeks of traveling, having family in town, and a birthday party, we sort of lost track of eating good food. I mean, the food we ate was good, just not good for us. Anyway, this week we followed the meal plan and everything turned out delicious. Also, hooray for not having leftover, unused, fresh meat (I hate it when that happens)! Here’s hoping we can do good this week, too!

So, it’s St. Patrick’s Day tomorrow! Did you know I’m a little bit Irish? Yup! My grandma’s side of the family is from Londonderry in Northern Ireland and I actually got to visit when I lived in the UK. I don’t know if I ever shared photos from my trip, so perhaps I will tomorrow if I find time to gather them today.

Anyway, when I was there I had Guinness and it was DELICIOUS. I’ve tried since that day in Ireland and it’s never been quite as good; I’ll take a Blue Moon or a hard cider any day instead of a stout. What kind of beer do you like? Beer isn’t paleo approved, but it’s going into one of our meals this week (the Irish stew), because sometimes you have to cheat a little bit for the love of flavor. It’s also supposed to be rainy tomorrow, which is the perfect setting for stew. I’m just a wee bit excited for dinner tomorrow. How are you celebrating St. Patrick’s Day?

Also coming this week is my recipe for cauliflower rice. For real this time; it’s on the schedule to go up sometime this week—get excited!

On the menu this week:

Sunday: Steak with Brussels sprouts and green beans

Monday: Irish stew and paleo rolls

Tuesday: Spaghetti (squash) and meatballs (made them from scratch last time and they were DELICIOUS)

Wednesday: Teriyaki chicken and (cauliflower) rice

Thursday: ceder plank grilled mahi mahi and veggies

Friday: pizza night!

  1. Mmmm beer. I'm not a stout fan either. Used to love porters and stouts, but my tastes changed during my second pregnancy, and now I love a good hoppy IPA. But honestly, I love trying and tasting new beer — I'm a bit of a craft beer snob, but I enjoy all varieties 🙂 (Have you checked out the Untappd app?… I know it's not paleo, but beer is so good…)

  2. I've been wanting spaghetti so bad! Maybe this Friday when we can't have meat. 😉

    I've tried cauliflower rice but I didn't like it. Hopefully it works out better for you!

    1. We tried the spaghetti squash, once, also, and it was a no-go. We're not Paleo though so I think our standards are a bit different.
