This Week’s Eats {May 18}

Last week we had some good eats over here with a few new recipes that worked out well. I was especially excited about the loaded sweet potato skins that we had, so much so that we’re having them again this week! It’s so crazy how much my tastes have changed; I used to hate sweet potatoes and now they’re on our plates several times a week.

I’m also excited about last night’s meal. We ate homemade General Tso’s chicken and it was really tasty! (By the way, does that link work for you? I can only get it to appear on our iPad and my iPhone, and I’ve tried different browsers.) In theory, it was really easy to make, just a little more time consuming than picking up the phone and ordering delivery. If you’re going to make it and have kiddos, I suggest making it on a weekend when you hopefully have extra hands to watch little ones.

Here’s our plan for this week:

Sunday: BBQ chicken and sweet potato fries (currently in the crock pot!)
Monday: fish and veg (husband has PT test the next day, so we’re keeping things “light” this night!)
Tuesday: Steak, asparagus, and baked sweet potatoes
Wednesday: Loaded sweet potato skins with calabacitas
Thursday: Kielbasa Hash (basically a way to use up our leftovers)
Friday: Eating Out in Gatlinburg, TN (suggestions are welcome!)
Saturday: Eating Out in Gatlinburg, TN

  1. The link worked for me! I loveeeeeeeeee Gen Tao Chicken, but it IS a process. I had had a slow cooker recipe that tasted amazing, but of course it's gone missing. šŸ™

    I love sweet potatoes myself, but the hubby isn't a fan, unless it's fries! haha.

  2. The link works on my Android phone, and that recipe is hilarious. Good to hear about sweet potatoes since I still don't like them. Have fun in Gatlinburg!

  3. We love Blaine's Bar and Grill in Gatlinburg. Definitely sit on the patio if it's warm. It's a great view of the Main Street!
